Banana-Oat Cookies

Banana-Oat-Peanut Butter-Chocolate Chip-Coconut....deliciousness!

Great as breakfast cookies & sweet enough for dessert.

Vegan/Dairy free ~ Can be made gluten free (with GF flour).


Ingredients

2 ripe bananas (mashed)

1/2 cup peanut butter

1/2 cup coconut oil (softened-melted)

1/2 cup maple syrup

4 teaspoons vanilla extract

1 cup oats

2 cups flour

1/4 cup coconut shreds

1-2 teaspoons salt

1-2 teaspoons cinnamon

1 teaspoon baking soda

1/4-1/2 cup chocolate chips

Directions

Preheat oven to 350 degrees. Grease a baking sheet with a little coconut oil. Mix all wet ingredients in one bowl and dry in another (leave out chocolate chips). Combine and mix all ingredients well. Fold in chocolate chips. Roll into balls and place on baking sheet, using a fork to gently flatten. Bake for 8-14 min until tops are no longer wet and bottoms are light golden brown.
